I was just there in November, and it was business as usual. The Buccaneer would be perfect for spring break as there are some water activities available right at the hotel for free (snorkeling, kayaking, etc.) or the concierge can help book half and full day excursions.
Both beaches, Mermaid and Grotto have bars. On Mermaid server come to the beach to serve. Don’t be in a hurry though. Hours ffr the two beach bars are basically 11:00am to 5:00pm unless there is a special function.
I am not sure about having a boat within their "area". Call the hotel. As far as other resorts/restaurants, there is only a stretch of beach for the resort only. In theory, you could go over the rocks and eventually get to Christianstad but having tried the overland route while hiking, I would not do it again. I do not remember as sign about coolers BUT they have a cooler with ice water and cups at the beach. It is really a good resort, well maintained. I have nothing bad to say about it except the high cost of food and alcohol at the restaurant(s).... Billy
