I am not a tourist in Capri, and I am here every summer since I was born.
Owning a luxury concierge in Italy, I have dined in many fancy Italian restaurants, and in Capri I have tried most of the fine dining spots, including a...few Michelin starred ones.
However, it was several years I didn't dine at d'amore, and that was before the talent of Pasquale Rinaldo brought a new life to the already solid restaurant.
It was a revelation.
Amberjack tartare with chestnut wood smoke: moving.
Revised Caprese salad: I was almost crying of joy when chewing the slightly low temperature cooked mozzarella, wrapping the most delicious cherry tomatoes.
"Carbonara" with citrus and shrimps: I am sorry Rome, but I never got a nicer carbonara in Monti or Testaccio.
Raviolo Caprese: I didn't think it was possible to improve the old grandma recipe, but Pasquale made it, by experimenting with different flours and creating the perfect dough.
Porchetta with pappacella sauce, endive, and potatoes: a great finish for a wonderful meal.
Finally, the caprese (with dark chocolate from Ecuador) had the same effect of ravioli: a traditional recipe studied and reworked to get the best flavor and texture.
The Sicilian white wine was also a perfect balance of fruitiness and the unmistakable volcanic aroma of Etna.
Last but not least, the kindness, enthusiasm, and passion of Chef Pasquale Rinaldo, the owner, and the staff of D'amore.
I will advise to try this gem to all my friends and customers.More
